Best Homemade Pho

Ingredients:

  • For the Broth:
    • 4 pounds beef bones (such as oxtail, knuckle, or marrow bones)
    • 1 large onion, halved and charred
    • 3-inch piece of ginger, charred
    • 5 star anise pods
    • 3 cinnamon sticks
    • 5 cloves
    • 1 tablespoon coriander seeds
    • 1 black cardamom pod
    • 1 teaspoon fennel seeds
    • 1 teaspoon salt
    • 1 tablespoon fish sauce
    • 1 tablespoon sugar
  • For the Soup:
    • 1 pound rice noodles
    • 1 pound beef sirloin, thinly sliced
    • 1 onion, thinly sliced
    • 4 scallions, thinly sliced
    • Fresh cilantro, Thai basil, bean sprouts, lime wedges, and sliced chili peppers, for serving
